Why we love it: Historically grown and made for locals, aligoté has searingly high acidity that made a crisp, fresh wine enjoyed as a simple thirst-quencher for workers, or to mix with local cassis to make Kir. But in recent years, the variety has made a resurgence, with many notable domaines making a go of more serious examples worth consideration. With the rising cost of White Burgundy (chardonnay), these grown-up renditions of aligoté, which have remained relatively affordable, have become excellent entry points into the region and to the lauded domaines that make them.
