Winemaker's notes: This wine is made with fruit from five old-vine blocks of the Chenu 1er Cru vineyards in Savigny, with vines aged 50-80 years old. Like all of her wines, Caroline handles this one delicately to retain its purity and expression. Grapes are always hand-picked and gently destemmed, fermentation is fully spontaneous. The resulting wine ages in neutral French oak before being bottled unfined and unfiltered.
Why we love it: Our favourite thing about Caroline’s wines are how expressive and typical they are - as in, unmistakably Burgundian, unmistakably Savigny - perhaps best defined by their purity. Our notes from tasting this wine with Juliette and Caroline at their kitchen table are extensive: “This wine is stunning. A deep, deep mineral vein, elegant and very complex aromatics... On the palate, it has a GORGEOUS acid structure and superfine tannins.”
