Mireia Taribó and Tara Gomez craft this beautiful, textural white wine through minimal handling from vineyard to bottle in the famed Sta. Rita Hills sub-appellation of Santa Barbara County (remember the movie, Sideways? We’re there with all of these Camins 2 Dreams wines!).

1/3 of these grapes were harvested early (before a September heat wave) in order to preserve the natural acidity. The other 2/3 of the grapes were picked *slightly* riper: a technique that ensures gorgeous, natural structure of the final wine: freshness from the first pick mixed with texture, ripeness and weight of the subsequent picks. It’s a technique perfected by Jim Clendenen at Au Bon Climat, who taught me about the range of time and ripeness that only benefits wines of this opulent-yet-restrained style. And it’s a technique that Mireia and Tara harness at Camins 2 Dreams, as well.

The grapes undergo pigeage (foot-stomping) after four hours on skins, and the wine undergoes (full) spontaneous fermentation in a combination of stainless steel and neutral French oak. The final blend is bottled unfined and unfiltered, and with minimal (<10ppm) SO2.
