Winemaker's notes: Les Saucours is one of Chenu’s two white vineyards – planted to mostly chardonnay with about 10% pinot blanc. Like all of her wines, Caroline handles this one delicately to retain its purity and expression. Grapes are always hand-picked, fermentation is fully spontaneous and since there are no controls, the wine sees full malolactic conversion in neutral oak.
Why we love it: This is by far the most rare wine in the Chenu lineup. The whole appellation of Savigny is planted to 95% Pinot Noir and only 5% white grapes: chardonnay and a tiny amount of pinot blanc, which has historically always been part of the white wines of Savigny, but no longer allowed to be planted. The old vine pinot blanc that grows here has been grandfathered into the appellation. Besides expressing the full snapshot of Les Saucours, the inclusion of pinot blanc in this cuvée adds a beautiful, weighty texture and enchanting aromatic complexity: part spice, part floral, it accentuates and compliments so perfectly the depth and nuance of the old vine chardonnay. A stunning and rare example of Savigny blanc.
