Why we love it: the organic grapes for this wine are foot-tread and then whole-cluster pressed into neutral French oak, where the wine underwent spontaneous fermentation. It’s bottled just weeks later, just before completion of the ferment, to naturally capture the bubbles. Mikey strives to capture the essence of coastal California through his wines, and this is such an exciting, delicious, extravagant example! Topotero Vineyard sits very close to arguably the best site in this part of California: Bassi Vineyard. Both are just a couple of miles from the Pacific Ocean: cold, ocean-sprayed and wind-swept vines that produce stunning fruit for wine.
